Fasolada
- Bean soup
Fasolada is a
very popular bean soup. It is usually eaten with feta cheese and crusty
bread. Bean soup is served with smoked herring
and is well known in Greece as a very nutritious meal.
Ingredients
§ ½ kg white beans
§ 1 onion
§ 3 carrots
§ 1 celery
§ 1 bay leaf
§ 2/3 cup of grated tomato and 3 tablespoons of tomato paste
§ olive oil
§ salt
§ pepper
Directions
1. Soak the beans
for 12 hours.
2. Wash them well
and place them in a deep saucepan.
3. Boil them for
20 minutes.
4. Chop the onion, the carrots and
the celery and
add them in the
saucepan. Αdd the tomatoes and bay leaf.
5. Add olive oil (as
much as desired), salt and pepper.
6. Stir the
mixture and add plenty of water (about 12 glasses).
7. Boil the soup
in low temperature until the beans are tender.
Spanakopita - Spinach pie
Ingredients
1 kg spinach
2 leeks
A handful of chard
(optional)
A handful of sorrel
(optional)
A handful of dill
3 scallions or a big
onion
150 gr feta cheese
(grated)
Oil
Salt, pepper
Ready made pastry
(dough sheet) in many pieces
Directions
- Wash spinach and other greens thoroughly and dry them well.
- Chop the spinach and other greens and mix them with the oil, feta, salt and pepper. Put aside for a while.
- Oil the bottom of a pan. Unroll three sheets of dough into your medium baking pan.
- Pour the filling and then cover with another three sheets of dough. Spray some water between the sheets for a crusty result.
- Bake into a pre-heated oven for about one hour.
Walnut
pie (sweet)
Ingredients (for 20 pieces)
300 gr. walnuts,
finely chopped in a food processor
100 gr. walnuts,
coarsely chopped
300 gr. sugar
400 gr. flour
150 gr. cow butter
(at room temperature)
8 medium eggs,
separated into yolks and whites
1 tsp. fresh
cinnamon powder
1 tsp. baking powder
For the syrup
600 gr. sugar
800 gr. water
80 gr. brandy
Directions
1. Beat the butter with 200 gr. of sugar in the mixer,
adding the yolks one by one until the mixture gets fluffy.
2. Clean the mixer bowl.
3 . Pour the egg whites with the remaining 100 gr. sugar.
Beat with wire on medium-high speed until meringue is done.
4. In a bowl mix the grated nuts with the flour, cinnamon
and baking powder. Pour this the mixture into the butter/yolk mixture and mix well with a spatula.
5. Add the meringue mixture and mix gently.
6. Preheat oven to 170 º C.
7. Grease and flour a round baking pan diameter of about
30 cm.
8 . Pour the mixture into the pan, lay across the surface
to be straight, sprinkle with coarsely chopped walnuts and bake 1 hour at
least.
9. Syrup: Boil sugar and water for 3 minutes. Add the
brandy.
10. Pour the syrup
on the walnut pie while they are both hot.
